Wordless Wednesday

Hi, sorry we are not wordless today. We are joining In Purrsuit of Flavours hosted by Easy and The Canadian Cats.

The theme today is salads and I have a recipe for lazy potato salad ( I just made that name up). I call it lazy because mom is too lazy to peel the potatoes and boil them so she microwaves them. As you can see, I am not thrilled with this apron.

Sorry, mom forgot to take a photo until it was almost all gone.

Don’t worry, the potato heads are not in the salad. They are doing well, just busy with their little spud.

Recipe:

6 medium sized potatoes- clean them, poke holes with a fork and microwave then let ool. If they are really clean keep the skins on, if not , you will have to peel the skins off.

2 eggs-hard bioled, shells removed

3 T mayonaise

chopped fresh chives

*you can add anything else you like -bacon, cucumbers, peppers, tomatoes, etc.

Directions- chop up all ingredients and stir together then chill.

  3. If we ate potatoes these days, that would be a yummy recipe…but alas spuds are very rare here, MOL!! Sometimes a sweet potato, but not too often…

    It s easy to peel a spud after its been microwaved…it just slides off!

  5. I microwave potatoes for potato salad too. They have more nutrients if you keep the skin on. It sounds very tasty.

  6. Potato salad has as many recipes as any totally popular dish would have – everyone has a new idea about it – one thing they all have in common is they’re really delicious. As many different recipes we’ve tried for potato salad, we’ve stuck with the one I learned from my Mom. Although since I’m now using Yukon Golds and their skins are so light – I just clean them and whack them up instead of peeling. Obviously this recipe hit the spot at your house….the bowl is almost empty!!!! Thanks for sharing.

  8. Your tater salad is very close to ours. I never thought of chives though. I will give them a try, I am sure we will love them. I don’t peel our potatoes either and I microwave the potatoes instead of boiling as you do. You have made me hungry for potato salad. Many a morning I have eaten potato salad for breakfast. We can’t leave potato salad alone when we make it. It is gone in no time!

  9. Oh, nummy! Never thought of microwaving the potatoes for the salad, i may try that soon, but don’t tell Sweetie until after he has tasted it. If he says nothing, and likes it as usual, great. He has a tendency to be against change, so you have to convince him by showing him first that it still tastes good, then he approves.

  14. Well as the old saying goes work smart not hard. I don’t peel my potatoes either.
    I used to peel all potatoes..Favorite sis of Angel Madi was a bit picky about textures as a child.
    Then one day I had lunch with her in elementary school. They had boiled red potatoes with the skin on them. She said they were the best potatoes ever. No more peeling.

  19. That is clever to microwave the potatoes – I never thought of that! I love homemade potato salad but don’t make it too often since it seems like so much work. That would make it easier for sure.
