Hi everyone. We are joining Brian’s Thankful Thursday Blog Hop .My hubby and I are thankful for all the kinds words of comfort you left for us on our loss of Jinx. And thank you to all who made cards/badges, I have added them all to Jinx’s post. I appreciate each and every one of you.
Penny had planned a special post for this week so I am going to let her take it from here. She is feeling very lonely as Jinx was her buddy.
Hi everyone. I am baking a cake. Do you know whose birthday it is today? It is Emily Dickinson’s 190th birthday. Every year , her museum in Amherst, Massachusetts ( 30 minutes from my house) has an open house for free and serves a birthday cake made with one of her recipes. This year, the tour is virtual and we can all attend, the party is 12-1PM today. To visit, click here.
They even have a color by number picture of Emily you can download. Click here.
Mom found Emily’s coconut cake recipe on Tori Avey’s website, for the recipe, click here.
Mom, Dad and Grammie all liked it, but mom says, ” it ain’t cake if it don’t have frosting. ”
I will be back next Tuesday to show you how to make a fake mistletoe because the real ones are poisonous to cats.
That is so sweet that they have those birthday open houses for Emily D. She was such a special author.
That cake looks quite yummy!!
Hooray, It worked!! I only wish I could have commented in the last two posts about Jinx…
Sorry about the trouble with comments. XO
It is good cake. XO
The cake is beautiful but my Mom says she’s like your Mom – frosting is a MUST! We will all miss Jinx but we’re happy she’s now an Angel and running free……..there are many Angels there who know her!
Hugs, Teddy

More healing hugs. We think of you often.
Not participating in the fill-ins. We just don’t do Christmas and I just have no fun things to add. I’ll participate after all the Christmas fill-ins are over.
Have a fabulous Thankful Thursday, Ellen. Big hug to you and lots of scritches to the kitties. ♥
Thank you. We will miss you this week at the fill-ins. XO
Ohhh I haven’t had cocoanut cake since my Mother in law passed. She made it so very high with lots of layers.
I recall she mad 3 cake pans of yellow cake. when the layers cooled she used dental floss to cut them in half.
So moist and tasty
Hugs Cecilia

Penny, it’s good to keep yourself busy even though you miss your buddy Jinx. In a few weeks I hope you are feeling more like yourself. And I think your Mom is on to something… cake without frosting is …. well, it’s cake, but it’s not as decadent.

Losing Jinx was a total bummer. But he is free of discomfort and constrictions now, so take heart. Thank you for the cake recipe. 🙂
Thank you. XO
I’m so sorry for your loss Penny. The cake looks good.
Thank you. XO
i agree! a cake must have icing!!
It sure does.
My human wonders if Emily Dickinson would be mad if she put frosting on her cake.
Interesting question. I say go for it.
Cake is great any time, and i know you can find a frosting for it, or come up with one.
WordPress is being a pain in the posterior again, not showing your posts in my feed. Otherwise i would have commented yesterday!
Sorry wordpress is being difficult. XO
The cake looks very good and I guess Jerry and I are in the minority, we like our cakes and cupcakes with no frosting. Not that we would ever turn down a piece of cake with frosting!
You will like this then.
That cake looks yummy! Good job!
Thank you. XO
That cake looks delicious! I’ll have to check out the recipe.
It is, even without frosting. 🙂

The cake looks great, Penny! But I’m kind of with your Mom – the frosting is my favorite part of cake! 🙂
Thank you. 🙂
