Penny’s Tips Volume 123

Hi everyone. Did you miss me? Silly question, of course you missed me.

Easter is coming so I have some Easter themed things for you.

First off is an easy side dish recipe that mom makes every Easter. It is not healthy, but it is tasty and easy.

Tater Tot Casserole-

Ingredients: 

32-ounce bag of tater tots
1 cup sour cream
2 cups shredded cheddar
1 can cream of potato soup
3/4 cup melted butter
2 cups corn flakes- crushed
 
Directions:
Defrost tater tots in microwave or just leave on counter for aa few hours. Then mix in sour cream, cheddar and soup. Spread out in a greased 9 by 13 casserole dish. Stir crushed cornflakes into melted butter and spread on top of casserole. Cook at 350 degrees for 50 minutes.

    I am drooling over that casserole…but since I am having the sons over for dinner…well, son #1 is a vegan so we will have to make that some other time!
    Maybe I can find cauli-tots and use vegan cheese and make my own potato soup to use…if we don’t just a plain protein, veggie and fruit we have to do a lot of planning! But its like an adventure in foodables:)

  2. On you, the ‘ears look good, you darling kitty. Get it? Years/ears. Okay you don’t have to laugh but I’m not sure you’re completely happy about those appendages, right? Haha, awfully cute though.
