Penny’s Tips Volume 127

Hi everyone! I was going to take another week off, but Grammie said I should do a post. She is mad at Rosie for saying she is on her litterbox list. Grammie said she is on her list too, but I can’t say what kind of list because the blog is G-rated.

Rosie did a nice job last week making this cat scratcher, but I found a way to improve on it. I had mom get some contact paper from the dollar store and I made it pretty.

Mom made these strawberry muffins. She made mini ones because she ran out of liners for the regular sized ones. She used a recipe she found online, but she tweaked it, so I guess it is our recipe now.  The big secret is she adds 3 T of sugar to the strawberries and lets them sit a few minutes before she mixes them in, she also added in some milk.

Directions: Preheat oven to 375 degrees F.  Put liners in muffin tins.

Ingredients: 1 stick butter

1 egg

1/4 cup milk

2 cups flour

3/4 cups sugar and 4 T sugar

1/2 tsp vanilla

2 tsp baking powder

1 and 1/2 cups strawberries chopped up.

 

Soften butter then add egg, sugar, flour, baking powder, vanilla and milk.

In separate bowl add 3 T sugar to strawberries and let sit for 10 minutes then combine with other ingredients.

Place in muffin tins and sprinkle sugar on top. Bake for 20-25 minutes. The smaller ones took 20 minutes.

  2. Ohhhhhhhhh strawberry muffins – my Mom loves strawberries and makes strawberry tarts but never made muffins – now she will though! Also, the contact paper on the outside of the scratcher not only makes it prettier but will hold it all together nicely!

  4. Hello Penny! Ooh, the strawberry muffins! I wish I had one right now! I add a little sugar to our strawberries when we have strawberry shortcake and give them a little mash. I think I will try making the muffins, they just sound so good this morning. I need strawberries!
    Grammie cracks me up… I have never met Grammie and I love her.

    Before I have strawberry short cake I also add sugar to the berries. Amazing hos juicy the are too
